Air Culinary.

The sun has set
and clouds have given way to the void.
Negroponte is talking about
"idiosyncrasies (like always wearing a blue-stripped shirt)."(1)

Grilled Pork Loin is suddenly in front of me.
It takes me half the dish to figure out
my favorite way to absorb it.

Cut a small piece of the "grilled Pork Loin
enhanced by a Peanut Sauce"(2)
and place it in on the tongue.
Start mastication.
The experience is relatively familiar.

Cut an equally small piece of
"poached Apple with a glazed Cranberry,
Prune and Nut Stuffing"(2)
and place it next to the Pork piece.
Do not stop mastication.
Having sweet prune enhance the meat
(and peanut in this case)
experience is as familiar
but far more interesting
than the pork alone.

After 10 to 15 seconds the pork starts disappearing.
It is now time to dip the "Gnocchi"(2) into the "Peanut Sauce"(2)
to preserve the memory of the early taste,
and start counterbalancing the overall sweetness.

Fresh Spinach"(2) subtully soothing salty crescendo
brings with it the reassurance
that dessert is still to come.
